This banana bread is my ultimate comfort food, not only because of it’s warm, rich deliciousness, but the very act of making it. Mashing the fruit, mixing the batter – this is food to make in peace and quiet, and to enjoy together.
Ingredients
- 125g butter
- 1 cup sugar
- 2 large eggs
- 2 cups plain flour
- 2tsp baking powder
- 5 ripe bananas
- 1tsp vanilla extract
- 1tsp cinnamon
- 1/2tsp salt
- 2tbsp walnuts (optional)
To make
Preheat the oven to 180°C
Lightly grease and line a loaf in
Mash four of the bananas
Cream the butter and sugar together
Whisk the eggs before adding slowly
Sift in the flour and baking powder, and add the salt. Mix to a smooth batter
Fold in the mashed banana and vanilla essence.
Pour the batter into the loaf tin. Cut the remaining banana lengthways and place on top of the batter, flat side up and, if you’re using them, sprinkle the broken walnuts over too
Cook for 1 hour.
Allow to cool in the tin before removing.
